Sponge Cake Ingredients:
1 1/2 cups Cake flour
2 teaspoon baking powder
9 eggs, yolk and whites are separated
2 teaspoon cream of tartar
1 1/2 cups granulated White sugar
1 1/2 teaspoon lemon extract
3/4 cup Canola oil
Sponge Cake Instructions:
Preheat the oven to 350°F. Grease and line either a 10x10 baking pan or two 8-inch round pans with parchment paper and then set aside.
Separate the egg yolks from the whites and set aside.
Get another bowl and sieve the cake flour and baking powder together. Mix and set aside.
Mix egg whites and cream of tartar. Whip on medium speed until fluffy. Shift to high speed and add sugar gradually until it smoothens out. Wait for soft peaks to form for around 7 minutes.
Place the orange extract in the egg yolks, whisk lightly and pour in the egg white mixture. Mix for a minute then add canola oil and continue mixing for a couple of seconds.
Add the sifted cake flour and baking powder mixture to the batter and mix well until smooth.
Pour to a baking tin or 2 round pans that’s lightly greased and lined with parchment paper. Bake for 40-45 minutes if using a 10x10 pan or 25-30 minutes for 8-inch round pans. To test if it’s baked, insert a toothpick until it comes out clean. Transfer the cake from the oven to a rack and let it cool down.
Yema Filling Ingredients:
1 can Condensed milk (400ml)
1 can Evaporated milk (125ml)
6 large sized Egg yolks
1/4 teaspoon Vanilla extract
Yema Filling Instructions:
In a heating stove top bowl, mix condensed milk, egg yolks and evaporated milk.
Get a saucepan with simmering water, put it on the stove and then put the bowl with mixed ingredients on top of the saucepan. Turn the heat on until the yema filling becomes thick.
Once you have achieved the thickness you want, turn off the heat.
Mix in the vanilla extract.
Let the yema frosting cool down and thicken.
Cover it with a plastic wrap and ensure that there is no air in between until it cools down.
Sponge Cake and Yema Filling Assembly
Spread 1/3 part of yema filling on the top of the first half of your sponge cake.
Place the 2nd half of the cake on top and spread the remaining yema filling on all sides, top included.
Sprinkle grated cheese on top.
